
Precisions about cooking times. At the end, my mung beans will have cooked for 43 minutes, rice for 25 minutes, sweet potatoes for 15 minutes and kale for 5 minutes.
This dish includes all 6 tastes. Sweet: ghee, rice and sweet potatoes Sour: lime juice squeezed on top of your bowl just before eating Salty: salt Bitter: fenugreek, kale Pungent: spices, onions, ginger Astringent: mung beans
Depending on your constitution and imbalances, you would use different proportions of these ingredients. If you are Kapha, use a higher bean to rice ratio, more green vegetables, less salt, less ghee. Pitta: use less spicing. Vata: use less beans, more ghee, less leafy vegetables.
