Ari’s Kitchari

This is a simple method to make kitchari with perfectly cooked ingredients. You’ll find plenty of recipes that call for putting all the ingredients at once and cooking like a stew. This methods accounts for different cooking times for different ingredients that are added one after the other.

Precisions about cooking times. At the end, my mung beans will have cooked for 43 minutes, rice for 25 minutes, sweet potatoes for 15 minutes and kale for 5 minutes.

This dish includes all 6 tastes. 

Sweet: ghee, rice and sweet potatoes
Sour: lime juice squeezed on top of your bowl just before eating
Salty: salt
Bitter: fenugreek, kale
Pungent: spices, onions, ginger
Astringent: mung beans

Depending on your constitution and imbalances, you would use different proportions of these ingredients. If you are Kapha, use a higher bean to rice ratio, more green vegetables, less salt, less ghee. Pitta: use less spicing. Vata: use less beans, more ghee, less leafy vegetables.
